Teacher Diaries #1

If you didn't already know, I'm actually a primary school teacher by profession. I am currently in my third year of teaching and love every minute of it. It has its positives and negatives, as well as the last year or so been a challenge but everyday is filled with something different and new and I wouldn't have it any other way. For today's post, I thought I would do a mini- day in the life - not sure if its interesting but here goes...                                                                   



New Year, New Home

A new year means new goals. This year I have not only set myself some personal goals for the year but as a family we some goals that we are looking to achieve around the house. I think everyone is spending more time indoors at the moment and have been for the past year, so its only right that we try and make the space we are living and working in -enjoyable, homely and relaxing.

 2020 seems to have flashed right before my eyes and I can't believe its over - so cliché! Before the new year rings in this weekend, I thought I'd do a rundown of my top products from the year. Loungewear, Leather and Long Chats

I've had, what can only be described as the craziest two weeks. It was coming to the end of half term and I was preparing myself for a week of nothing but meeting up with friends and having some 'me time' after a crazy first time back. Then the day before we were due to break up for half term, my bubble had to close and me and my class had to go into isolation for two weeks. I've never been so panicked in my life. It was horrible seeing their little faces all upset because we weren't able to do our end of term celebrations. Its been a two week isolation full of lots of thoughts, events and the pending lockdown put a lot of things into the mix too. I am determined to be as confident as I can through all of this though!

Working From Home Loungewear

Since April, I like a lot of people in the world have been working from home. My bedroom is not only my room anymore but a classroom for when I'm teaching children. I'm in more of routine now than before and writing a to do list everyday has been a massive help too. Since the lock-down started, I feel like everyone went crazy for loungewear. Acts of Kindness During Lockdown

Lock down isn't easy by any means, its taken a toll on all of us, no matter what age or country we are from. We have been told to stay indoors and we know why, its for the best and to protect lives of others. Its hard not to see families, friends and other people like we normally would. I can't wait to get out of this and give my grandma the tightest of hugs. We saw her last in March, she lives in London and we're in Leeds - quite the distance, so that video call or text message means everything now.

Easter Egg Cheesecake: Using Up Easter Eggs

I love all the chocolate that comes out at this time of year, the mini eggs to the Lindt bunnies, they all really excite me! As a family, we tend not to eat the chocolate, rather just melt it down and dip fruit in. This year, I wanted to do something different and switch things up. I was scrolling through Pinterest this week and came across the most yummy looking egg cheesecakes and just had to try it out. This was the result and they went down a treat ❤

Ingredients - 4 Servings, 2 Easter Eggs

>2 Easter Eggs split open
> 1 packet of digestive biscuits
> 75g of unsalted butter
> 250g of mascarpone cheese
> Icing sugar (eyeballed and tested as we went along)
> 2 tbsp of vanilla extract
> 150ml of double cream

Method

1. Use a food processor or a plastic bag and break down the biscuits until they are in chunks. We had some finely crushed and some bigger parts for a bit of a crunch.
2. Melt the butter in the microwave and then mix in the with the biscuit crumb until everything is combined and mixed together.
3. Scoop the biscuit crumb into the egg shells and leave in the fridge for an hour to set.

Whilst the crumbs are setting, its time for the filling.

4. In a bowl, mix together the mascarpone cheese, vanilla extract and icing sugar. We used a electric hand whisk to beat the ingredients together until smooth and lump-less. I found the best way to add the sugar was a little bit at a time and then give it a taste test, you want it sweet enough for you.

5. After the mascarpone cheese mixture has gone smooth, add the double cream in slowly and carry on whisking. At this point, the mixture will turn from a smooth liquid to a very thick, creamy texture - it will look good enough to eat.

6. Take out the shells from the fridge and spoon the mixture into each one. Using these measurements, we filled all 4 shells. Smooth out the top using the back of a spoon and ensure all the mixture is inside the shell.

7. Decorate! Its time to decorate the top of the cheesecakes, this part is open to anything and everything. We went with some melted chocolate all over to decorate, then a combination of ferrero rochers and mini Lindts too. Mini eggs would be perfect for this or even berries!

6 Things To Do During Self-Isolation

What a crazy world we are living in at the moment. It all seems a bit surreal, I keep thinking this is all a dream/we're living the life of characters in a movie or something. We're a few weeks into the UK lock down and my life has changed so much. I work as a teacher and schools were shut around 3 weeks ago, we're teaching online now, which is new in itself and working from home is a completely different concept to me. I'm still trying to find that balance between sleeping and working, hopefully I'll crack it soon! 

In today's post, I am sharing with you some ideas of keeping yourself busy/entertained during this lock down period or if you're in self-isolation for any reason. Happy Saturday! Today I bring you a slightly different post than usual, its all about food. My second love after beauty. In the last few years, I have become more experimental with my lunches and dinners, to make them more exciting to eat! I've been a vegetarian since I was born, never had meat, fish or even eggs. I'm not entirely vegan, I don't eat eggs (religion and family), milk and yogurt don't sit well on the stomach and then I love cheese. I can tolerate some cheese but others such as goats cheese, which I adore, my stomach can't take no more :( This doesn't mean I don't have lovely food still.
